Bite with Belkys: Kobe Tenderloin from Hyde Lounge at American Airlines Arena

The Chef: Dustin Atoigue
The Restaurant: Hyde Lounge (American Airlines Arena)
The Dish: Kobe Tenderloin

Ingredients:

1 5 oz. of kobe filet
sea salt, to taste
pepper, to taste
1 tsp. of butter
1 sprig of fresh thyme
1 garlic clove, crushed
1 Tbs. of soy sauce
3 Tbs. of clarified butter
1 bunch of scallions
2 Tbs. of garlic chips (garnish)

Method of Preparation:

-Begin by seasoning the kobe filet with salt and pepper on both sides. Then, let it broil in the oven until it browns a bit.

-Next, let the meat cool off and place it in a plastic bag. Also, add butter, fresh thyme, garlic, soy sauce and the steak. Place the bag in a pot of simmering water and let it cook for about one hour. Make sure the water does not come to a boil.

-Once the filet is ready, remove it from the bag and broil one more time for a few minutes.

To Plate:

Serve the kobe filet in slices, over a bed of scallions. Top it with clarified butter, sea salt, pepper and garlic chips. You can also place some soy sauce on the side.
