Bite with Belkys: Baked mac and cheese from South Street

The holidays are here and if you're thinking about making a casserole dish for the entire family to enjoy, we've got just the one. Let's grab a Bite of southern charm with Belkys.

The Dish: Traditional Baked Mac and Cheese

Ingredients:

2 lbs. of elbow macaroni
3 cups of half and half
1 tsp of nutmeg
salt, to taste
pepper, to taste (optional)
1 Tbs. of onion powder
1 Tbs. of paprika
1 Tbs. of hot sauce
8 oz. of sharp cheddar cheese, grated
8 oz. of mild cheddar cheese mixed with monterey jack, grated
3/4 cup of bread crumbs

Method of Preparation:

-Begin by cooking macaroni in boiling, salted water until al dente.

-In the meantime, prepare the milk mix. In a pan, pour in half and half and let it simmer about five minutes. Then, add a dash of nutmeg. Stir and set it to the side.

-Once the macaroni is cooked, strain it and shock it with cool water to stop the cooking process.

-Next, season the pasta with a pinch of salt, onion powder, paprika and hot sauce.

-Now, get ready to start the layering process in a cast iron baking pan. First, start with the cooked macaroni. Then, add sharp cheddar cheese, mild cheddar cheese mixed with monterey jack and repeat this one more time.

-After, pour in the milk mix and top it all off with bread crumbs. Let this bake in a 400 degree oven for about 35-45 minutes.

To Plate:

You can garnish with chopped chives.
