Bite with Belkys: Spatchcocked Grilled Bourbon Chicken from Michael's Genuine Food and Drink

Serving family style platters is always nice during the holidays. Tonight, one local chef is showing us how to grill the perfect whole chicken. Let's grab a Bite with Belkys.

The Dish: Spatchcocked Grilled Bourbon Chicken

Ingredients:

1 whole chicken
1/2 cup of Bourbon
1 Tbs. of apricot preserves or jam
Juice and zest of 1/2 a lemon juice
1 Tbs. of champagne vinegar
2 tsp. of honey
1/2 tsp. of fresh thyme, minced
3 Tbs. of extra virgin olive oil
salt, to taste
pepper, to taste

Method of Preparation:

-Start by removing the back bone from a whole chicken. Then, press down on the chicken to flatten it.

-Next, prepare the marinade. In a small pot, over medium to high heat, cook down bourbon for about three minutes. Then, add apricot preserves or jam, lemon juice, champagne vinegar, lemon zest, honey and fresh thyme. Let the marinade cool down.

-After, rub olive oil and the marinade over the chicken. Place the chicken in a plastic bag and let it marinate for about two hours in the refrigerator.

-Now, season the chicken with salt and pepper and grill. Chef Bradley places a heavy pan over the chicken to keep it flat on the grill. He recommends cooking it for about 20 to 30 minutes over a low flame.

To Plate:

At the restaurant, they serve the chicken on a platter with salad. You can drizzle a little olive oil over the top.
