Bite with Belkys: Apple Pie Pancakes from Banyan at the Bonaventure Resort & Spa

After the holidays you might have lots of food left over. So tonight, one chef is showing what to do with any left over pie. Let's grab a Bite with Belkys.

The Chef: Bob Axenfeld
The Restaurant: Banyan (Bonaventure Resort & Spa)
The Dish: Apple Pie Pancakes

Ingredients for Apple Pie Pancakes:

3 cups of all purpose flour
3 Tbs of sugar
3 tsp of baking powder
1 1/2 tsp of baking soda
1 1/2 tsp of salt
3 cups of buttermilk
1/2 cup of heavy cream
1/3 cup of melted butter
3 whole eggs
2 ea. apple pie slices

Ingredients for Topping:

1 cup of walnuts
1/2 cup of dried cherries
1/2 cup of maple syrup
1/4 cup of caramel sauce.

Method of Preparation:

-Start with the pancake mix. In a bowl, mix all purpose flour, sugar, baking powder, baking soda and a pinch of salt.

-Then, in a separate bowl mix the wet ingredients. Combine buttermilk, heavy cream, melted butter and eggs. After, pour the wet ingredients into the dry ingredients and whisk it all together.

-Now, take a couple slices from your apple pie and incorporate it into the pancake batter mix.

-Next, coat a flat top grill with a non-stick spray and add 4 ounces of the batter per pancake.

-Let the pancakes cook on both sides.

-For the topping, combine walnuts, dried cherries, maple syrup and caramel sauce.

To Plate:

Serve three pancakes per person and garnish with ground cinnamon.

Serving Suggestion: Champagne

Makes: 12-14 pancakes
