Bite with Belkys: Key Lime and Tomato Mahi Mahi from Florida Cookery

There's a new restaurant in town doing authentic Florida-style cooking. And the chef is giving us one of his top recipes, so that you can make it at home. Time to grab a bite with Belkys.

The Restaurant: Florida Cookery (James Royal Palm Hotel)
The Dish: Key Lime and Tomato Mahi Mahi

Ingredients:

10 oz. mahi mahi
1 tsp of salt
1/2 tsp of pepper
1/2 tsp of cumin
1/2 tsp of curry
1 Tbs of olive oil
1/3 cup of red pepper, julienned
1/3 cup of yellow pepper, julienned
1/4 cup of leeks, diced
1/2 cup of tomato, diced
1 cup of shrimp/lobster stock
1 tsp of lime juice
2 tsp of fresh parsley
1 tsp of fresh cilantro

Method of Preparation:

-Begin by seasoning the mahi mahi with salt, pepper, cumin and curry.

-Then, cook the fish in a hot pan with a little bit of olive oil.

-Add red and yellow peppers, leeks, tomatoes, bay leaf, red wine vinegar, shrimp or lobster stock and cook for another minute.

-Finish the fish in a 375 degree oven for about 12 to 15 minutes. Once the fish is ready, squeeze lime juice and add parsley and cilantro.

To Plate:

Serve the mahi mahi with the vegetables and the sauce. At the restaurant, they add a corn spoon bread.
