The Dish: Caramel Apple Cheesecake
Ingredients for crust:
2 cups of graham cracker crumbs
1 Tbs. of cinnamon
1/4 tsp. of salt
1/2 cup of unsalted butter, melted
Method of Preparation:
-In a bowl, add graham cracker crumbs, cinnamon, salt and butter. Then, whisk it all together and place it in a springform pan.
-Make sure to pat it down and wrap the pan in aluminum foil.
-Chef Aliza likes to bake the crust for about 10 minutes in a 350 degree oven.
Ingredients for cheesecake batter:
5 green apples
4 Tbs. of unsalted butter, melted
1/4 cup of brown sugar
1 Tbs. of cinnamon
salt, a pinch
6 eggs
1 cup of sour cream
2 Tbs. of lemon juice
1 Tbs. of vanilla extract
1 Tbs. of cornstarch
1 1/2 lb. of cream cheese
1 1/2 cups of sugar
Method of Preparation:
-Start by chopping some green apples. Then sauté them in a pan with butter, brown sugar, cinnamon and a pinch of salt. Place the apples over the crust.
-Then, in a bowl, add eggs, fresh lemon juice, a little vanilla extract and cornstarch.
-Now, in a mixer, beat cream cheese, sugar, the egg mix, and a cup of sour cream.
-Pour the batter over the caramelized apples. Then create a water bath by putting the springform pan inside a larger pan and filling it half way with hot water.
-Let the cake bake in a 325 degree oven for about 1 1/2 to 2 hours. Once it's ready, cool it down in the fridge.
To Plate the Dish:
Serve a nice slice with some caramel sauce on the side, and garnish with a couple of fresh blueberries.
Serving Suggestion: Roasted Coffee or Hot Tea
