Bite with Belkys: Brick Chicken With Butternut Squash and Apple Gratin from Timpano Italian Chophouse

Chefs all know how important it is to have just the right side dish to compliment their meals. So tonight, we're stopping at a South Florida hot spot and learning how to make and pair one of their best sellers. Time to grab a Bite with Belkys.

The Chef: Asher Roebuck
The Restaurant: Timpano Italian Chophouse
The Dish: Brick Chicken with Butternut Squash and Apple Gratin

Ingredients for Brick Chicken:

1/2 chicken
kosher salt, as needed
white pepper, as needed
1 1/2 Tbs. of dried thyme
blended oil (equal parts of extra virgin olive oil and canola oil), as needed

Method of Preparation:

-Season the chicken with salt, white pepper, thyme and a little blended oil.

-Then, sear in a hot pan with a dab of oil.

-At the restaurant, they place a brick wrapped in aluminum foil on top. The brick will keep the chicken from curling up.

-Finish, by cooking the chicken in a 425 degree oven for 15 to 20 minutes.

Serves: 1

Ingredients for Butternut Squash and Apple Gratin:

3 lb. of butternut squash
3 granny smith apple (brine with black pepper corn, salt, sage stems, water and thyme)
1 1/2 Tbs. of sage
12 oz. of leeks (braised with butter, chicken stock, riesling, chili flakes, salt, white pepper)
2 cups of ricotta cheese (mixed with 2 eggs and 1 Tbs. of bread crumbs)
parmesan cheese, to taste
2 Tbs. of panko bread crumbs
pomodoro sauce, 1 scoop per plate

Method of Preparation:

-First, coat a baking pan with a non stick spray. Then, layer grilled butternut squash slices and apple slices.

-After, add sage, braised leeks, ricotta cheese, more butternut squash and more apple.

-Top it with shaved parmesan cheese, panko bread crumbs and more sage.

-Let it bake in a 425 degree oven for about 15 to 20 minutes.

Serves: 4-6

To Plate:

At the restaurant, they serve a homemade pomodoro sauce, the butternut squash and apple gratin and the brick chicken.

Serving Suggestion: Chardonnay
