Bite with Belkys: Stuffed Dates from The Local House

Appetizers are a small part of a meal, but they can leave a big impression with guests. A South Florida chef combines sweet, salty and savory flavors all in one bite. Time to grab a Bite with Belkys.

The Dish: Stuffed Dates
Ingredients:
2 oz. of lean ground beef
4 medjool dates (remove the seed)
1 pinch of salt
1 pinch of pepper
1/2 Tbs. of ground cumin
1 Tbs of ground coriander
1/2 Tbs. of curry powder
1 oz. of dubliner cheese, grated
2 slices of bacon, cut in half
2 Tbs. of yellow hot pepper paste (known as "aji amarillo")
1/2 of a yellow bell pepper, chopped and blended
3 oz. of heavy cream
Method of Preparation:
-Start by seasoning ground beef with salt, pepper, cumin, coriander and curry powder.
-Then, add dubliner cheese and mix it all together.
-Now, stuff medjool dates with the ground meat.
-Next, wrap each date with half a slice of bacon and sear for about three minutes on all sides.
-Finish the dates in a 350 degree oven for about five minutes.
-Chef Guily also recommends making a sauce. In a hot pan, she combines a yellow hot pepper paste known as "aji amarillo" and blended yellow bell pepper and heavy cream. Let the sauce reduce.
To Plate:
Serve the sauce and place the stuffed dates on top. You can garnish with chopped cilantro.
