Bite with Belkys: Bella's Salad from Bella Beach (Trump International Beach Resort)

Even though you're making a light dish it can be heavy with flavors. A South Florida chef shows how to make his restaurant's signature salad. Time to grab a Bite with Belkys.

The Dish: Bella's Salad
Ingredients for Bella Beets:
10 oz. beets, peeled and cut into small cubes
1/8 cup balsamic vinegar
2 Tbs. extra virgin olive oil
1/4 tsp. salt
1/4 tsp. cracked black pepper
Method of Preparation:
-First, marinate the beets with all the ingredients inside a plastic bag, such as a food saver. Seal the bag.
-Then, place the bag with the beets in simmering water. Let it cook for about two hours.
-Lastly, chill the beets completely.
Ingredients for Red-Zin Vinaigrette:
2 oz. bella beets
1/8 cup beet juice from Bella Beets
1/8 cup red zinfandel wine, simmer to reduce by half, cooled
2 Tbs. red wine vinegar
1 Tbs. shallots, minced
1/4 cup extra virgin olive oil
2 Tbs. spring water
salt and pepper, to taste
Method of Preparation:
-In a high speed blender, add beets, beet juice, reduced zinfandel, red wine vinegar and shallots. Puree it until there is a smooth consistency.
-While the blender in on, slowly pour in olive oil and water. Season to taste with salt and pepper.
-The vinaigrette can be made up to one week in advanced if stored in an air tight container.
Ingredients for Salad:
8 oz. baby arugula
3 oz. red zin beet vinaigrette (see recipe)
sea salt, to taste
8 oz. bella beets (see recipe)
2 oz. high quality goat cheese
1 oz. pistachios, out of shell and toasted
microgreen sprouts, for garnish
Method of Preparation:
-To assemble the salad, drizzle the red-zin vinaigrette over baby arugula. Then, add a sprinkle of sea salt.
To Plate:
Spread a little vinaigrette on the plate for decoration. Then, add a bed of the baby arugula salad, the cooked beets, goat cheese, pistachios and microgreen sprouts. You can also serve grilled lobster tail, shrimp or chicken.
