The Restaurant: Latin House Burger and Taco Bar
The Dish: Pig Wings or Pork Shanks
Ingredients:
4 small pig wings (pork shanks)
2 bottles of beer (preferably Harpoon's UFO)
2 Tbs. of sweet butter, unsalted
1 small shallot, minced
1 small onion, chopped small
salt, to taste
pepper, to taste
1/4 cup of white wine (sauvignon blanc)
1/4 cup of barbecue sauce (asian glaze)
spring lettuce, as needed
Method of Preparation:
-Start by marinating the pig wings or pork shanks with beer overnight.
-Then, in a hot pan with melted butter sauté chopped shallots and onions. Season with salt and pepper.
-After the shallots and onions are translucent, pour in white wine and let it reduce.
-Next, add the marinated pig wings and let them cook about 15 minutes on each side.
-Now, place the pork wings alone on a baking pan and cook them for about two hours in a 275 degree oven.
-Finish, by tossing the pork in your favorite barbecue sauce. At the restaurant, they make a garlic, chili sauce combined with a balsamic vinaigrette.
To Plate:
Simply serve the pig wings over a bed of spring lettuce.
