Bite with Belkys: Hawaiian Skirt Steak from Grille 401

The Dish: Hawaiian Skirt Steak
Ingredients for marinade:
4 skirt steaks
1/4 cup of ginger powder
1 tbsp. of garlic powder
1 cup of sugar
1 can of pineapple juice
1 cup of cider vinegar
2 cups soy sauce
Ingredients for pineapple salsa:
2 cups of grilled pineapple, 1/2 inch dice
2 tbsp. of extra virgin olive oil
1 tsp. of kosher salt
pepper to taste
1 tbsp. of red onion, 1/8 inch dice
1 tbsp. cilantro, minced
1 tsp. of jalapeño pepper, seeded and minced
Method of Preparation:
-Begin by preparing a marinade. In a bowl, combine ginger powder, garlic powder, sugar, pineapple juice, cider vinegar and soy sauce. Whisk it all together.
-Then, pound the steak. It will help tenderize the meat. Place it in a container and pour the marinade over the top. For best results, let the meat marinate for 24 hours. Once marinated, grill the steak.
-Next, prepare a pineapple salsa. In a bowl, combine grilled pineapple, extra virgin olive oil, kosher salt, pepper, red onion, cilantro and jalapeño. Warm up the salsa and get ready to plate.
Roll up the steak and serve the pineapple salsa over the meat. Grille 401 serves the skirt steak with a side of Jalapeño Mac and Cheese.
