Bite with Belkys : Seafood Orzo Saganaki from Kouzina Greek Bistro
A taste of Greece tonight! We're stopping by a new Greek restaurant in town and learning how to make one of their best dishes. Let's grab a Bite with Belkys.

The Dish: Seafood Orzo Saganaki
3 Tbs of extra virgin olive oil
2 Tbs of onion, minced
1 cup of calamari, cut in rings
1 tsp of garlic, minced
1/4 cup of Ouzo (substitute with white wine)
1 1/2 cup of tomato sauce
1 pinch of saffron
2 cups of orzo Greek pasta
1/2 cup of Feta cheese crumbles
Salt and pepper, to taste
Method of Preparation:
-Start by pouring a little olive oil over a medium hot pan. Then sauté chopped onions until translucent.
-Next, toss in the shrimp, calamari, mussels and minced garlic. Season with a pinch of salt and pepper.
-After, deglaze with Ouzo or white wine. Allow the sauce to reduce.
-Now, add tomato sauce, saffron and parboiled orzo pasta.
-Once it comes to a boil, add Feta cheese and taste.
Top the dish with more Feta cheese and a drizzle of extra virgin olive oil.
Serving suggestion: White Wine
