Bite with Belkys: Linguine with clams
How about a dish that's simple, delicious and the heart of southern italian cooking? We're talking classic linguine with clams. Let's grab a Bite with Belkys.
The Restaurant: Sunset Catch Restaurant in Pompano Beach
The Dish: Linguine with Clams
12 Middleneck Clams
2 Tbs. extra virgin olive oil
2 cloves garlic, sliced
1/4 lb. dry linguine
1/4 cup dry white wine
5 - 6 sprigs Italian flat leaf parsley
Pinch crushed red pepper flakes
Method of Preparation:
- Bring salted water to boil in a pot. Add dry linguine and cook until al dente (slightly chewy).
- In a sauce pan, sauté garlic with extra virgin olive oil until golden brown. Add clams, season with red pepper. Then, add white wine and cover the sauce pan and simmer until the clams open-- about eight minutes. Add some parsley and about 1/4 cup of pasta water and cook after minute or two.
- When the linguine is cooked, drain and add to clams. Mix well.
- Place in a bowl, drizzle with olive oil and garnish with more fresh parsley.
