Bite with Belkys: Seafood Risotto from Mendoza

How about a "one dish wonder" for dinner tonight? Risotto -- like you've probably never had it before. Time to grab a Bite with Belkys.

The Dish: Seafood Risotto

 

Seafood Risotto

Ingredients:

  • 1/2 a yellow onion
  • 3 cloves of garlic
  • 1/2 a celery stick
  • 2 sprigs of rosemary
  • 2 bay leaves
  • Olive oil
  • 3/4 cup of rice
  • 1/2 cup of white wine
  • 1 cup of fish stock
  • 1/2 a lemon
  • Mascarpone
  • 1 Lobster
  • 2 Scallops
  • 2 Large shrimp
  • 2 Calamari

Directions:

-Over high heat place oilve oil in a pam

-Add the onion, garlic, rice, white wine, fish stock, and a bouquet of clery, rosemary, and bay leaves.

-Cook for 8 minutes, remove the bouquet, and stir the rice and continue to cook for 3 minutes

-Add heavy cream and mascarpone

-The rice will darken in color as it contiues to cook.

-Add salt, peper and olive oil to all sides of the seafood.

To Plate the dish:

Start with the rice, put the seafood on next and finally drizzel with a mixture of garlic, olive oil, and parsley.
