Bite with Belkys: Chicken Massaman from Asia Bay Bistro & Sushi Bar

So you want to expand your palate, but you're a meat and potatoes kind of person. Well tonight, we're cooking up a hearty Asian dish, even the least adventurous diner will love. Time to grab a Bite with Belkys.

The Chefs: Peter Hepp & Toni Toyyib

The Restaurant: Asia Bay Bistro & Sushi Bar

The Dish: Chicken Massaman

 

Ingredients:

  • 2 potatoes
  • 1 cup coconut milk
  • 1 tablespoon red curry paste
  • 1/2 cup oyster sauce
  • 1 tablespoon sugar
  • 7 ounces of chicken breast
  • 2 potatoes
  • 2 tablespooons cashews
  • avocado slices for garnish
  • edible orchid for garnish

 

Method of preparation:

-Start by adding two potatoes to boiling water. Let the potatoes cook till they're soft, then remove them from the water, and let them cool. Then peel the potatoes, quarter them and set them to the side.

-Next, pour a cup of coconut milk into a pot and letting this reduce for about three minutes.

-Add the red curry paste, the oyster sauce and the sugar and let this cook for another three to four minutes.

-Add the chicken, stir and cook this till the chicken is done (about three minutes). You can tell when the chicken is done when it expands and starts to turn white.

-Finally, add the potatoes.

 

To Plate the Dish:

-Pour the chicken and potato mixture into a big soup bowl.

-Place the cashews on top.

-Then add the avocado slices and garnish with an edible orchid if you wish.

Serves 1-2
