Bite with Belkys: Rigatoni Mediteranio

The Dish: Rigatoni Mediteranio (2 servings)
2 tablespoons olive oil
1 tablespoon fresh garlic
1/2 diced tomato
1 teaspoon mixed herbs (oregano, basil, rosemary, thyme, parsley, crushed pepper)
4 ounces chicken breast
1/2 cup heavy cream
1 tablespoon butter
2 tablespoons sun-dried tomatoes
1/2 cup fresh tomato sauce
6 ounces rigatoni
Fresh grated parmesan cheese
Salt & Pepper
Start by boiling your pasta.
Pour olive oil in a hot pan add garlic and sauté. Add chicken slices and sauté until it's cooked. Now add sun-dried tomatoes, fresh chopped tomatoes, mixed herbs and tomato sauce. Mix in heavy whipping creme.
Drain pasta, add to sauce and mix well. Add salt and pepper to taste, fresh basil, parmesan cheese and serve.
