Bite with Belkys: Healthy but Hearty

Mandalay Salad (Serves 4)
1/2 iceberg lettuce
1/2 romaine lettuce
3 chicken breasts
2 c. shredded carrots
1 large chopped tomato
1/2 c. finely chopped celery
3/4 c. large red pepper julienned
1/3 c. chopped scallions
3/4 c. corn kernels
3/4 c. pineapple chunks
3 Mandarin oranges (separate into individual pieces)
1 c. sliced almonds
1/2 tablespoon toasted sesame seeds
Honey (to taste)

Fry your breaded chicken until golden brown. Then cut and toss your lettuce, and it with the shredded carrots. Now arrange the rest of the ingredients in the following order: red pepper, corn, tomato chunks, celery, pineapple chunks, scallions, mandarin orange sections, and almonds. Slice your chicken into thin pieces and arrange them in the center of the salad. Drizzle with honey, then sprinkle the toasted sesame seeds over the chicken.

Serve it with mandarin orange dressing or your favorite dressing.

The fried chicken can be substituted by grilled chicken.

Mandarin Orange Dressing
1 tbsp. lemon juice
1 crushed mandarin orange
1/2 c. honey
1/4 c. salad oil
1 c. mandarin orange juice
1/4 c. white vinegar
1/4 c. toasted sesame seeds
Salt and pepper to taste
Blend the ingredients and serve.
