Bite with Belkys: Pears wrapped in smoked Prosciutto

Pere Allo Speak E Gorgonzola (Pears wrapped in smoked Prosciutto) Serves 4:
3 large pears
1/4 lb. smoked Prosciutto (thinly sliced)
1/4 c. truffle oil
2 tsp. butter
1/2 c. Gorgonzola cheese
1 c. heavy cream
Take your pear and slice the bottom and top, then peel the rest of the skin, and scoop out the core. Slice the pear in 4. Wrap a piece of the Prosciutto around each piece of pear and place it in a pan or baking dish, season the pears with pepper and place a dab of butter on top of each one. Put the pears in a 350 degree oven for 8 to ten minutes.
Mix the Gorgonzola cheese, heavy cream, and butter over medium heat until everything melts. Pour the sauce over the pears, add a drizzle of truffle oil and serve.
