Linguini alla Putanesca
2 1/2 olive oil
8 anchovy filets
1 garlic clove, chopped
4 tablespoons capers
2 cups black olives
3/4 cup dry white wine
2 1/2 cups tomato sauce
salt
pepper
In a saucepan place the olive oil and saute anchovies in high heat. As soon as the anchovies "melt" add in the garlic and capers. Saute for about a minute or so, add in the white wine, let the mixture reduce and then add in the black olives and tomato sauce. Cook the sauce at low heat for about 5-7 minutes.
Boil pasta and mix with sauce.
