Bite with Belkys: Marvelous Meatloaf
A delicious spin on a traditional dish that's both healthy and easy to make.
RECIPE: BBQ Turkey Meatloaf
RESTAURANT: Gourmet Station, Miami
THE CHEF: Salvadore Castillo
2 lbs of ground turkey
1/2 a cup of barbecue sauce (original or honey)
1/2 cup of oatmeal
1/4 cup of chopped onion
1/4 cup of red pepper
salt and pepper to taste
Mixed ingreditents together, starting with onions and peppers, then oatmeal, salt and pepper and finish with barbecue sauce.
Put mixture on a oven proof clear rectangular shape dish(9 1/2" by 5 1/2"). Pressed meat when filling up baking dish to make sure there aren't any bubbles, and fill it up a little bit higher than the rim because meatloaf will shrink some.
Heat oven at 350 degrees and bake for 40 minutes, then change temperature to 400 degreees and bake for 15 minutes.
Always make an incision on the top in the middle section to check if the meat is cooked if it is still pink inside then leave it for 5 more minutes at a time.
Serve with mashed sweet potatoes with raisins
