It's a favorite of millions and has just about as many recipes. But we've got a spicy and simple way to cook that chili.

The Chef: Lou Callahan

Ingredients:
1 tablespoon vegetable oil
3 lbs. ground sirloin
1 16 oz. can red kidney beans
2 tomatoes, chopped
1 green pepper
1/2 onion
1 1/2 tablespoons chopped garlic
2 teaspoons paprika
1 1/2 teaspoons chili powder
1 1/2 teaspoons cumin
1/2 cup water
1 1/2 teaspoon salt
1 1/2 teaspoon black pepper
2 tablespoons tomato paste

Directions:
1. Saute ground sirloin over medium heat in vegetable oil until fully cooked. Drain excess juice.
2. Return ground sirloin to the same pot. Add spices and cook for five minutes.
3. Pulse green peppers, tomatoes, and onions in food processor or blender, add to chili and cook for 10 minutes.
4. Add chopped garlic and tomato paste.
5. Add 1/2 cup of water and lower flame, then simmer for 15 minutes.
6. Add 12-14 ounces of red kidney beans and simmer for five minutes.
7. Taste for salt and pepper.
