Bite with Belkys: Chicken Fried Rice

It's a Chinese creation that's nearly impossible to perfect at home. That is until now. We've got a chicken fried rice recipe that's simply delicious.

The Dish: Chicken Fried Rice

The Ingredients:

1/4 cup diced onions

1/4 cup chopped scallions

1/4 cup shredded carrots

1/4 cup sweet peas

1 teaspoon ginger root

1 teaspoon minced garlic

3 tablespoons vegetable oil

1 cup cooked premium short grain rice

2 eggs

1/2 cup chicken or shrimp

1 tablespoon soy sauce

1 tablespoon sake

Directions:

Heat two tablespoons oil in wok, add onions, garlic and ginger for two minutes. Add green onions, peas, carrots and meat. Saute until meat is cooked. Remove and set aside in a bowl. Scramble the eggs and cook in the wok, then set aside in the same bowl. Cook rice in wok for two minutes with last tablespoon of oil, then add ingredients from bowl. Finish with soy sauce and sake.
