Bite with Belkys: Strawberry and Cream Cheese Blintz

Move over bacon and eggs. We've got the recipe for a breakfast blintz that's simple to make.

Ingredients for Crepes:

1/2 cup olive oil

1/2 cup water

2 eggs

1/3 cup cornstarch

Ingredients for Filling:

1/4 cup cream cheese

1/3 cup sugar

1/2 cup fresh strawberries (or your favorite fruit)

1 tablespoon cinnamon

Garnish:

Powdered sugar

Whip Cream

Directions:

Start with the crepe batter by mixing all of the ingredients until smooth, pour into thin layer and fry in large pan. Remove from pan and set aside. Batter should yield four crepes.

Next mix all of the filling ingredients, the cream cheese, sugar, fresh strawberries, and cinnamon until smooth. Scoop some of the filling into each crepe. Fold crepe in, then put back on the frying pan for a few minutes.

Garnish with a bed of fruit, whip cream, powdered sugar, and cinnamon.
