Ingredients:
4 egg yolks
4 tablespoons sugar
1 banana, ripe
1 package mascarpone cheese (17.5 ounce)
1 teaspoon vanilla
1 package ladyfinger cookies
cocoa powder
Cream Ingredients:
1 cup heavy cream
1 tablespoon sugar
1/2 cup sweet coconut flakes
Rum Syrup Ingredients:
Spiced Rum
Water
Sugar
Directions:
Start by making the rum syrup by mixing equal parts, spiced rum, water and sugar, then set the syrup aside.
Now crack four eggs and use only the yolks. Add four tablespoons of sugar to the egg yolks and either use a mixer or whisk it by hand, however the chef says a mixer works best. Add chunks of the banana, a dash of vanilla extract, and the marscapone cheese to the egg yolk mixture and mix until it's smooth and creamy. Set this aside.
Make your whipped cream by whisking heavy whipping cream and sugar until it gets fluffy. Now mix in the sweet coconut flakes.
Now start the layering process by placing lady fingers at the bottom of your dish, pour some rum syrup on top, pile on the banana base, more lady fingers, more rum syrup and finally the whipped cream. Refrigerate it for at least an hour and finish it off with the cocoa powder.
Serves 4.
