Bite with Belkys: Mac And Cheese

It's a big hit with the kids, but who says grown ups can't have mac and cheese, too. We've got a new way to whip up this cheesy classic.

Truffled Macaroni And Cheese

Ingredients:
3/4 cup elbow macaroni
2 tablespoons truffle oil
2 tablespoons butter
1/4 cup wild mushrooms
1 teaspoon chopped chives
salt to taste
pepper to taste
6 green asparagus
6 white asparagus
1/6 cup fresh shredded romano cheese
2 tablespoons mascarpone cheese
1/6 cup heavy cream

Bring one quart of water to a bowl and add macaroni. Cook until al dente. Drain water and set aside.
Dice vegetables and set aside.  
Add oil to saute pan, then add butter, salt and pepper, and vegetables.
When vegetables are sauted, add heavy whipping cream, mascarpone cheese and romano cheese.
Add in cooked pasta, and turn off the stove while you mix so the dish doesn't dry out. Pour the pasta into a bowl and garnish it with more romano cheese and asparagus.

Serves 2.
