Bite with Belkys: Carrot Creation

Carrot Soup (4 servings)
1/2 red onion
1 lb. carrots
1 stalk celery
2 tablespoons olive oil
1/2 teaspoon finely chopped garlic
1 tablespoon salt
6 cups of water
Slice onion, celery, and potato.
Pour olive oil in pot and add garlic, sliced vegetables and sauté. Then add carrots and sauté. Pour in 6 cups of water cover and simmer for 25 - 30 minutes. Uncover when carrots are tender and puree with a hand blender or a regular blender.
