Gretta's Got It: Dinner Party
Entertaining doesn't have to be intimidating. With a little instruction, anyone can throw a fabulous dinner party -- all you need is a few simple recipes. 7's Gretta Monahan gets some help from top chefs at the South Florida Food and Wine Festival.
WSVN -- OK, everybody, I have an S.O.S. now: I'm giving a dinner party for 12, and I am completely useless in the kitchen. So, thank goodness, my "foody friends" are around. We're going to go see a few, and I'm going to show you how to put a dinner party together in an instant.
Gretta: "Hi, Katie!"
Katie: "Hi, Gretta. This is a totally easy appetizer. You could totally do this. You make the grits, and you can add whatever you want to them. I added shrimp, some saffron and chipotle pepper.
"So you just put that on. Just fry each side -- fry each side so, it gets warm all the way through -- because it's already essentially cooked, so you're not worrying about cooking it. These are rock shrimp.
"Now, we have some Cilantro Cream to go on top. Ooo, fancy."
Gretta: "Mmm, this is great. Now this was one, two, three. You promise when I do it, it's going to be one, two, three? Uh, I don't know about that."
"OK, dessert. Thank God my friend Dillan is in the house, and she's going to show me my final course and how to make it easy. Hey, Girlfriend."
Dillan: "A perfect dessert would be a Rice Krispies® treat or any kind of cereal treat because they're so quick to do. I also have a Sundae Bar set up so that everybody can actually -- OK, see what happens? Here are people coming through, and they decorate the cereal treat with all the different toppings."
Gretta: "Now she's made it so that I don't have to make the dessert, my guests do. Yes, so it's easy. This is yummy. Much better than a fancy dessert."
Gretta: "Hallelujah! I found Patrick Neely. He is going to give me my main course."
Patrick: "Hello there, darling. How are you doing?"
Gretta: "Oh, bless your bones."
Patrick: "You needed a main course. I've got a little bit of everything."
Gretta: "Tell me about the spaghetti. We do a BBQ Spaghetti. I know I can boil water, I can do that."
Patrick: "You get yourself one of these -- Neely's BBQ sauce, our sauce. You got the BBQ sauce, you take your pork, or beef, mix that in -- or turkey -- turkey, beef or pork -- I love that. Anything you like, you just mix it in with your sauce and noodles and you're done."
Gretta: "Three steps, three steps. That's why I love you. That's it, that's why I'm serving the spaghetti."
Moral of the Story
All you need is a little help from your friends. My appetizer is from West Virginia, my main course is from New Orleans and my dessert is from New York City.

Neely's BBQ Spaghetti
To order Neely's BBQ Sauce:
Neely's BBQ Spaghetti
- 1 tbsp. olive oil
- 1/2 cup chopped bell pepper
- 1/4 cup chopped onion
- 1/2 oz. Garlic Salt
- 2 bottles (16 oz.) Neely's BBQ Sauce
- 2 lbs. cooked spaghetti
- 2 lbs. pork, beef or chicken, cooked and chopped into pieces
-In a large skillet, heat olive oil over medium heat.
-Add peppers, onion and garlic salt.
-Cook the mixture, stirring frequently for 3 to 4 minutes.
-Add Neely's BBQ Sauce, bring to a boil, and stir frequently to prevent sticking.
-Add the meat of your choice (pork, beef, or chicken) into the BBQ spaghetti sauce.
-Let it continue to simmer.
-Cook at a very low temperature for 30 minutes.
-Pour sauce over spaghetti noodles. Mix thoroughly and serve.

Dylan's Rice Krispies® Treats
Preparation Time: 20 minutes
Total Time: 30 minutes
- 3 tablespoons margarine or butter
- 1 jar (7 oz.) marshmallow fluff
- 6 cups Rice Krispies®
-Melt margarine in large saucepan over low heat. Add marshmallows and stir until completely melted. Remove from heat.
-Add Kellogg's Rice Krispies®. Stir until well coated.
-Using buttered spatula or waxed paper, press mixture evenly into 13x9x2-inch pan coated with cooking spray.
-Cut into 2-inch squares when cool. Best if served the same day.
Yield: 24 squares
In a large microwave safe bowl, heat margarine and marshmallows at HIGH for 3 minutes, stirring after 2 minutes. Stir until smooth. Follow steps 2 and 3 above.
