Hollywood and Dine: Eva Longoria's Mexican Scrambled Eggs

Her TV character would rather be wined and dined than be caught in the kitchen. But Eva Longoria knows how to make great breakfast in bed. Get cracking in today's Hollywood and Dine.

4 eggs (mixed in small bowl)
1 tbs. butter
2 tbs. drained salsa
1 tbs. chopped peppers (green or red bell)
2 tbs. crumbled chorizo or sausage (cooked)
1 tbs. chopped parsley or cilantro
tortilla chips or warm tortillas

Melt butter in nonstick saute or frying pan. Add peppers and soften one minute.  Add salsa and mixed eggs.  Add pinch of salt and pepper.  Fold over and lightly scramble.  Add cooked sausage and parsley or cilantro.  Gently fold and scramble eggs to desired doneness.  Garnish with tortilla chips or warm tortillas.
