Hollywood and Dine: Sasha Baron Cohen's Bangers & Mash

You know him as "Borat," but this man behind the act isn't from Kazakhstan he's actually from the U.K. and Sacha Baron Cohen loves a good British meal. Reporter David Moss cooking up "Bangers and Mash" in today's Hollywood and Dine.
4 Idaho Potatoes
1/2 Cup shredded Cheddar Cheese (up to 3/4 cups if you like)
1/4 Cup Chopped Parsley
Salt and Pepper to taste
Boil potatoes in salted water until soft. Drain potatoes and reserve 1/2 cup of cooking water. Add 1/2 teaspoon salt and some fresh cracked pepper. Mash potatoes until chunky. Add cheddar cheese and parsley and mash until mixed. Be careful not to over-mash the potateos or they may become starchy. Taste. Add salt and pepper to your liking.
Add pork, and/or beef sausage, kielbasa, apple-chicken sausage, turkey sausage, whatever you like.
Two large onions:
Saute onions* with salt and pepper until soft and sweet.
To cook sausage, you can use any method you like, including steaming, sauteing in a frying pan, baking in the oven until slightly colored and hot or, my favorite, grill on BBQ until marked and about to burst.
Serve with onions over mashed potatoes and a little Dijon mustard or Horseradish on the side.
*You can add a sliced Granny Smith apple to cook with the onions for additional sweetness and variety of flavor.
