Hollywood and Dine: Liv Tyler's Cauliflower Soup

4 tablespoons unsalted butter
2 cloves garlic, chopped
1 small onion, rough chopped
1 small dried chili pepper
1 head cauliflower, rough chopped

1/2 cup white wine
1/2 cup heavy cream
1 quart vegetable or chicken stock
-Foam butter over medium heat.

-Foam butter over medium heat.
-Add garlic and cook until garlic starts to color.
-Add onions and dried chili pepper and cook for about 10 minutes (until golden and soft).
-Add cauliflower and sweat until it starts to soften slightly, then add salt and pepper.
-Turn heat up and add wine.
-Cook until mixture reduces by half (about 5 minutes).
-Add cream and stock to barely cover cauliflower.
-Simmer until tender (About 20 minutes).
-When soup is cool enough to handle, blend until smooth (in blender or food processor). If you want soup thinner, add more stock and blend a little longer.
-Garnish with butter, chives, or croutons.
