Hollywood and Dine: Richard Dreyfuss' Onion Rings

7 cups or a 56 oz. bottle of vegetable or canola oil
1 cup flour
1/3 cup cornstarch
1 tsp. baking powder
1 tsp. table salt
1/2 tsp. cayenne pepper
1 1/4 cups ice cold club soda
Onion rings
Red pepper rings (they're delicious!)
Broccoli
Cauliflower
Mushrooms
Any vegetable you like
Heat oil in a deep pan or deep fryer to 375 degrees.
Mix dry ingredients in a medium bowl.
Just before you're ready to cook, mix in club soda. The batter will be thick and a little lumpy. That's good.
Dip onion rings or vegetable of choice (shrimp is also excellent) into batter.
The coating will be a little uneven, but that's okay.
Drop into 375 degree oil one at a time until several pieces are in pot, but not crowding each other.
After one minute, turn each piece and fry another minute (they will not turn golden brown).
Two minutes total, and they will be crispy perfect.
