WSVN — Grilled fish is a healthy treat during the summer months. That's what's cooking tonight as we grab a Bite with Belkys.

The Dish: Grilled Salmon Zen Bowl

Ingredients:
2 6 oz. Salmon Fillets
salt and pepper to taste
Truffled Miso Glaze
1 3/4 cups mirin rice wine
3/4 cup apple juice
1 1/2 cups white sugar
16 oz. white miso paste
1/4 cup gluten free soy sauce
1 1/2 tbs. white truffle oil
Fried Brown Rice
2 qt. cooked brown rice (follow directions on package)
1/4 cup sesame oil
1/4 cup ginger-garlic puree
2 tsp. kosher salt
2 tbs. sesame-canola blend
1/4 cup gluten free soy sauce
1 cup chicken stock
1 tbs. chopped scallions
1 tbs. chopped cilantro
Vegetable Stir Fry
2 tbs. sesame-canola oil
1 cup chopped asparagus, broccoli, sugar snap peas, garden peas, steamed edamame
Kosher salt to taste
toasted sesame seeds and micro cilantro to garnish

Method of Preparation:
– In a hot pan add Mirin rice wine, apple juice, white sugar and white miso paste. You can buy all ingredients for this dish at Asian markets.

– Next- add gluten-free soy sauce and blend it all together. Let it cook and reduce it down by half. Add truffle oil and set aside.

– Now for the rice. Add sesame oil and ginger-garlic puree to a bowl of cooked brown rice. Note: The ginger-garlic puree is equal parts raw ginger and raw garlic pureed with just enough water to make the consistency of apple sauce. Mix well.

– To fry it, put a blend of canola and sesame oil in a hot pan and add the rice. Cook about a minute then add gluten free soy sauce, scallions, cilantro and set aside.

– To make the vegetable stir fry, add more sesame-canola to a hot pan with chopped asparagus, broccoli, sugar snap peas, garden peas, steamed edamame and kosher salt. Toss and set aside. *Note: You can use other vegetables if you prefer.

– Cook the salmon last. Season with salt, pepper and sesame- canola oil. Put it on a hot grill for a minute and a half, then change the angle and cook another minute to get the perfect diamond grill marks. Flip it over to finish for another minutes or so, then put it into the glaze and coat.

To Plate:
-Put the fried brown rice in a bowl with the green veggie stir fry around the edges. Top it with the salmon and finish with truffle oi, toasted sesame seeds and micro- cilantro.
