Hot Mess Burger from Bulldog Burger

1 8 oz. Burger1 4-inch Challah Bun1 oz. Sauteed Button Mushrooms1 oz. Caramelized Onion2 pieces Bacon2 Tbs of brown sugar2 oz. Blue Cheese2 oz. Horseradish Mayo2 oz. Crispy Fried OnionKosher salt and ground black pepper to taste

Method of Preparation:

-First, season the burger on both sides with kosher salt and ground black pepper.

-Then, heat a heavy bottomed skillet over medium high heat and add a drizzle of oil. Sear the burger over high heat and cook to desired temperature.

-Next, split and toast the bun.

-In the meantime, sprinkle brown sugar over cooked bacon and caramelize it with a torch or in the oven.

-Now, top the burger with mushrooms, caramelized onions, crumbled blue cheese, and the candied bacon.

-Let the meat rest for a few minutes.

To Plate:

Spread horseradish mayonnaise on the bun. Place burger on top and garnish with crispy onions.
