Portobello Mushroom Stack from Sublime Restaurant & Bar

Ingredients:

4 large portobello mushrooms2 shallots, chopped3/4 cup of red wine1/2 cup of button mushrooms, chopped1/4 cup of dried porcini mushroomsvegetable stock1/2 cup of yellow onion, chopped1 lb. of baby spinach1-2 tomatoes, sliced thin1-2 yukon gold potatoes, sliced thin and blanched 1/2 tsp. of fresh thyme 1/2 tsp. of fresh rosemaryextra virgin olive oil

Method of Preparation:

-Start by removing the stems from the portobello mushrooms and set them to the side.

-Then, coat the portobello caps with extra virgin olive oil. Place them on a sheet pan lined with parchment paper (make sure the gills are facing up) and bake in a 325 degree oven for about seven minutes.

-In the meantime, prepare a gravy sauce. In a hot pot, add a drizzle of extra virgin olive oil and sauté shallots.

-Next, deglaze the pan with red wine. After, add the portobello mushroom stems, button mushrooms, porcini mushrooms and vegetable stock. Mix this all together and cook for about one hour, until most of the liquid is gone. Once its ready, transfer it to a blender to make the gravy.

-Now, prepare some spinach. In a deep pot with a little extra virgin olive oil, sauté diced onion with fresh spinach.

-To assemble the mushroom stack, coat a ring mold with a non stick spray. Then, inside the ring mold place a portobello mushroom cap, sautéed spinach, tomatoes, blanched potato slices, thyme and rosemary. Bake this in a 350 degree oven for about ten minutes.

To Plate:

First serve a little bit of the mushroom gravy sauce. Then, place the portobello stack on top. At the restaurant, they also add a side of mashed potatoes.
