Zucchini Pasta from Dolores but you can call me Lolita

Ingredients:

1 zucchini, cut in thin strips3 Tbs of extra virgin olive oil1/2 cup of marinara sauce4 oz. of shredded mozzarella2 oz. (one slice) of fresh mozzarella, slice 1/4 inch thickFor Garnish: Cherry tomatoes and shaved parmesan cheese

Method of Preparation:

-Begin by peeling the zucchini. Then, slice it into thin strips. At the restaurant, they use a mandoline.

-Next, place the sliced zucchini in a pan and add a little extra virgin olive oil.

-Also add, marinara sauce, shredded mozzarella and fresh mozzarella.

-Toss it all around and serve immediately.

To Plate:

You can garnish with cherry tomatoes and shaved parmesan cheese.

Serves: 1

Serving Suggestion: Pinot Grigio
