Steak, Spinach and Florentine Mac And Cheese from Ireland's Steakhouse

Ingredients for the Steak and Spinach:

2 (10 oz.) New York strip steakmontreal seasoning blend, as needed2 cups of watercress6 roasted cipollini onions1 pack of fresh spinach1/2 oz. of extra virgin olive oil1 Tbs. of shallots, minced1 Tbs. of garlic, minced1/8 cup of toasted pine nuts1/4 cup of golden raisins1/4 cup of white winesalt, to tastepepper, to taste

Method of Preparation:

-Start by seasoning the steak with a montreal seasoning blend and grill. Make sure to let the steak rest for five minutes after cooking and before serving. To plate, place the steak over a bed of watercress and garnish with roasted cipollini onions.

-Next, prepare a side of sautéed spinach. In a hot pan, add a dab of extra virgin olive oil and sauté shallots, garlic, fresh spinach, pine nuts and golden raisins. Then, add a splash of white wine and season with salt and pepper.

Ingredients for Florentine Macaroni & Cheese:

extra virgin olive oil, as needed1/2 Tbs of shallots, minced1/2 Tbs of garlic, minced1 cup of mushrooms, chopped 2 cups of spinach1/4 cup of white wine1/2 cup of béchamel2 Tbs of heavy cream1 1/2 cup of cooked cavatelli pasta1/4 cup of parmesan cheese1/4 cup of asiago cheesesalt & pepper, to taste1/4 cup of feta cheese1/4 cup of black olives

Method of Preparation:

-First, sauté shallots, garlic and mushrooms in a little extra virgin olive oil. Then, toss in fresh spinach.

-Next, add a splash of white wine and 1/2 cup of béchamel. Béchamel is a flour and milk mix, and the chef says you can leave it out.

-Mix it all together. After, add heavy cream, the cooked pasta, parmesan cheese, asiago cheese and a pinch of salt and pepper.

-To plate, top it with feta cheese and black olives.

Serves: 2
