Bite: Sugar Cookies

The Dish: Sugar CookiesIngredients:

Cookies

3 cups all-purpose flour, sifted
1/2 tsp. kosher salt
1 cup unsalted butter, room temp.
1 cup sugar
1 large egg, cold
1/2 tbs. pure vanilla extract
1/8 tsp. extract of your choice (lemon, almond, etc.) *optional

Icing

3 oz. pasteurized egg whites
1 tsp. pure vanilla extract
4 cups powdered sugar, sifted
1/2 lemon juice
food coloring of your choice-- amounts vary on how dark you want the color

Method of Preparation:

- Pre-heat oven to 325 degrees. In a mixing bowl, add unsalted butter and sugar and blend for about 5 minutes-- until fluffy.

- Scrape the bowl down and add egg, vanilla, sifted flour and kosher salt. Mix until blended well.

- Roll the dough on a floured surface to form a ball. Cut it in half, cover in plastic, wrap then put it in the refrigerator for about half an hour. When it's chilled and firm, roll it out about 1/8 of an inch thick. Take your favorite cookie cutters and cut your cookies. If you want to hang them on the tree, don't forget to cut a hole for the ribbon.

- Bake your cookies at 325 degrees for 20 minutes.

- While they're baking, make your frosting. In a bowl, add pasteurized egg whites. Whip until nice and frothy.

- Add lemon juice and sifted powdered sugar. Mix for 5 minutes then add the food coloring of your choice.

- When the cookies cool, it's time to decorate. Be creative and have fun! Set the finished cookies aside to let the frosting set.

To Plate:

String ribbons through holes for the cookies you want to hang on the tree. Put the rest on a serving plate and enjoy.
