The Restaurant: Pasta Del Giorno in South Miami

The Dish: Chicken Florentine


Ingredients:

1 oz. blended oil

6 oz. chicken breast

1 Tbs. flour

salt and pepper to taste

3 oz. spinach

2 oz. grape tomatoes

3 oz. fresh mozzarella

8 oz. spaghetti

1 tsp. garlic

1 tsp. shallots

1 oz. white wine

3 oz. chicken stock

1/4 oz. shaved Parmesan

2 tbs. butter

1/2 tsp. parsley


Method of Preparation:

- Salt and pepper a flattened chicken breast and sprinkle with flour on both sides. Put blended oil in a hot pan and sauté the chicken on medium high heat until it's light golden brown on both sides. Set chicken aside.

- In the same pan add white wine, chicken stock and let the sauce reduce by a quarter. Add Parmesan cheese, then turn up the heat and add butter. Swirl it around until it's melted, then set the sauce aside.

- In another hot pan, melt more butter and add fresh spinach. Sauté for a couple of minutes, then add tomatoes and fresh Mozzarella cheese. Mix it in and set aside.

- Boil the spaghetti. When it's al dente it's time to plate.


To Plate:

Put spaghetti on serving plate and layer with the chicken breast, then the spinach mixture, more fresh mozzarella and top with the Florentine Sauce. Garnish with shaved Mozzarella and fresh Parsley.


Serving suggestion: Chianti
