Appetizers are a great way to start off the evening, especially if you're serving shrimp. That's what's on the menu tonight, as we grab a Bite With Belkys.The Chef: Reto Von Weissenfluh

The Restaurant: Bar Crudo on South Beach

The Dish: Shrimp Tomatillo

Ingredients:

1 dozen medium shrimp

1 tbs. red onion

1 bay leaf

1 tsp. garlic

1/2 cup scallion whites

1/2 tsp. thyme

4 oz. salt

1/s tsp. pepper

2 stalks lemon grass

3.5 quarts water

For Tomatillo Sauce:

0.9 oz. cucumber

1 tbs. cilantro

1 tsp. jalapeno

1/2 avocado

1 garlic clove

1/2 lemon, juice

1/2 tsp. salt

3 oz. tomatillos

0.3 oz. olive oil

0.1 oz. wasabi powder

Garnish

Micro Sorrel

Method of Preparation:

- For Sauce:

Put ingredients in blender and blend until it's nice and smooth. Set aside and refrigerate. This sauce also makes a nice dipping sauce for different vegetables or other seafood.

- For Shrimp:

Now, prepare the water for the shrimp. Thinly slice onion, garlic, scallion whites and lemon grass. Combine all ingredients and bring to a boil. Put the shrimp in a container and pour the water over them, covering the shrimp (be sure and strain out the onion and garlic, etc.). Let sit for 15 minutes, remove the shrimp and let them cool. This method keeps shrimp from over-cooking.

To Plate:

Put a spoonful of Tomatillo Sauce on a serving plate and carefully stack shrimp on top. Garnish with Micro Sorrel and enjoy.
