Organic Stuffed Chicken/Semilla Eatery & Bar

A South Florida chef believes chicken is a great go-to-meal. Especially, when you stuff it his way. Time to grab a Bite with Belkys.

The Dish: Organic Stuffed Chicken Breast

Ingredients:

4 organic chicken breasts (or organic airline chicken breasts)

4 spicy lamb sausages

1 sheet of caul fat (get it from your butcher)

1 tsp. Harissa (or red chili paste)

1/2 cup diced tomatoes

1 carrot, diced

1/2 cup celery root, diced

1 zucchini, diced

1 roasted red pepper, diced

3/4 tsp. kosher salt (regular or Pink Himalayan)

3/4 tsp. white pepper

3 tbs. olive oil

1/2 cup cilantro, chopped

1 tbs. butter

Method of Preparation:

-Start by chopping all the vegetables: Roasted red pepper, tomato, celery root. In a hot pan add olive oil, butter the red pepper, tomato and celery root. and a mix of more diced veggies, carrots, fennel and zucchini. Mix well and add Kosher salt. Chef uses Pink Himalayan but regular kosher salt will do. Then, add white pepper and cilantro.

- Sauté for about 5 minutes, then add Harissa Sauce (or you can substitute red chili paste). Next, add spicy lamb sausage into the bowl of sautéed veggies and mix well. Set aside.

- Wrap the chicken breast in plastic wrap and flatten it. Put down a sheet of caul fat, it holds the rolled breast in place and keeps it moist. Place the chicken breast over the sheet of caul fat, then put the stuffing on top of the breast. Using the caul fat, form a roll and tuck the caul fat under to hold it in place.

- Add olive oil to a hot pan and sauté the chicken roll for two to three minutes on each side until it's golden brown. Finish in the oven at 350 degrees for another six minutes.

To Plate:

Slice the rolled chicken breast diagonally into bite-sized pieces and serve with Israeli Couscous. Garnish with Micro Cilantro and juices from the pan.
