Sirloin Skewers

The Restaurant: Chima Brazilian Steakhouse in Ft. Lauderdale

The Dish: Sirloin Skewers

Ingredients:

4 pieces baby sirloin

1/2 a Spanish onion

1/2 yellow pepper

2 grape tomatoes

1/2 cup Napa cabbage

1 cup mashed potatoes

3 bottles dark beer

1 cup brown sugar

6 in. bamboo skewers

Method of Preparation:

- Soak bamboo skewers in water so they don't burn.

- For the dark beer sauce, pour three bottles of your favorite dark beer into a pot. Add one cup of brown sugar, stir well and bring to a boil. Turn down to a simmer and let it reduce for 30 minutes. Set aside.

- Cut bite-sized pieces of baby sirloin and veggies. Put them on a skewer, starting with the steak. Put them on with the fat side facing in for better flavor. Next, add a piece of sliced onion, then yellow pepper and the tomato. Add another piece of pepper and one more piece of onion and finish with a second cube of sirloin.

- When the skewers are ready, put them on the grill for 4 to 5 minutes on each side.

To Plate:

Plate with Napa cabbage and creamy mashed potatoes. Drizzle Dark Beer Sauce over your Sirloin Skewers.

Serving suggestion: Caipirinha, a traditional Brazilian cocktail.
