Tomahawk Rib Eye Chop

The Dish: Tomahawk Rib Eye Chop with Spaghetti Squash Gratin

Ingredients:

Steak:

1 two-pound Rib Eye steak, 3-4 inches thick

Kosher salt to taste

black pepper to taste

2 tbs. olive oil

Spaghetti Squash Gratin:

1 Spaghetti squash cut in half lengthwise

2 sticks butter

1 1/2 cup Reggianno Parmesan

3/4 cup Pecorino Romano

1 cup roasted pistachios

4 tbs. toasted pumpkin seed oil

Sea salt and pepper to taste

Method of Preparation:

Steak:

- Sprinkle Kosher salt and black pepper on both sides of a two-pound Rib Eye steak. Drizzle olive oil on both sides, then sear it on a hot grill. Grill for a minute and a half, then give it a quarter-turn and cook for another minute and a half. Turn the steak over and repeat. - Take the steak off the grill and top it with butter. Finish in the oven at 350 degrees for about 20 minutes for medium-rare.

Spaghetti Squash:

- Cut the squash in half lengthwise and put both halves in a roasting pan, seed side up. Put butter, salt and pepper in each half where the seeds are. Put an inch and a half of water in the bottom of the pan to help steam the squash.

- Cover the squash tightly with plastic wrap and aluminum foil and bake for an hour at 350 degrees.

- Once it cools- scrape out the seeds and discard. Scoop out the squash and sauté with butter, sea salt, pepper, Pecorino Romano and Parmesan cheese.

-Sauté for a couple of minutes, then put the squash in individual ramekins or a casserole dish.

-Top with remaining cheeses and bake at 350 degrees for about 15 minutes. When it's done, top with crushed pistachios and pumpkin seed oil.

To Plate:

When the Rib Eye is ready, Chef Kelley plates it with sautéed organic vegetables and garnishes with fresh herbs and edible flowers. It's served with the Spaghetti Squash Gratin on the side.

Serving suggestion: Cabernet Sauvignon

Serves: 2 generously
