Coq Au Vin/Mina's Mediterraneo in Miami

A South Florida Chef sharing a recipe first cooked up in Northern France. Grab your spoon and bowl for this one as we grab a Bite with Belkys.

The Restaurant: Mina's Mediterraneo in Miami

The Dish: Coq Au Vin

Ingredients:

For chicken:

5 lb. boneless chicken thighs

2 1/2 tsp. salt

2 tsp. black pepper

1/2 cup flour

3 tbs. oil

2 tbs. butter

For sauce:

5 carrots, finely chopped

1 tsp. salt

1/2 tsp. pepper

4 cups chopped onions

4 tsp. garlic, minced

1/2 c. tomato sauce

2 cups chicken broth

3 tbs. cognac

3 glasses red wine

5 branches thyme

2 tsp. dried oregano

4 bay leaves

2 sprigs rosemary

1 tbs. butter

16 ounces white mushrooms

Method of Preparation:

- Marinate chicken thighs in garlic, salt and pepper for an hour or more. Add olive oil to a sauté pan and get it hot. Dust the chicken thighs in flour- sauté them in the pan- 3 minutes on each side.

- Transfer the thighs to a Dutch Oven and set aside. In the empty sauté pan, add clarified butter and mushrooms. Sauté for about 5 minutes then add them to the chicken pot.

- Next, add more clarified butter to the pan and sauté chopped onions for 5-7 minutes. Then, add carrots, garlic, salt, pepper and oregano and sauté for several more minutes.

- Now, add Cognac and bay leaves and put it all in the pot with the chicken. Pour in a good quality red wine, tomatoes, tomato sauce and chicken stock. Add rosemary and thyme and bring to a boil. Reduce the heat and simmer for 45 minutes.

To Plate:

In a shallow bowl, make a ring of mashed potatoes (Chef Sonia uses Asiago Cheese in hers) and dish the Coq Au Vin into the center. Garnish with fresh parsley and enjoy!

Serving suggestion: Côtes du Rhône, Samorens Red Wine
