Garlic Shrimp/Bulla Gastrobar

Spanish tapas, also known as little dishes, give diners a chance to try many treats in one seating. A chef shows us how to make garlic shrimp. Time to grab a Bite with Belkys.

The Chef: Luis Quant

The Restaurant: Bulla Gastrobar in Coral Gables

The Dish: Garlic Shrimp (Gambas al Ajillo)

Ingredients:

8 medium shrimp

3 Tbs. olive oil

2 cloves garlic, sliced

1/4 Tsp. chopped Chile Arbol or Guindilla

1 Tbs. Brandy

1 Tbs. chopped parsley

Salt to taste

Ciabatta Bread

For Infused Garlic Oil:

1 cup olive oil

15 cloves garlic

Method of Preparation:

- Start by making infused garlic oil. Put olive oil in a pot along with garlic cloves and cook on low heat for about 45 minutes. Set aside to cool then put infused oil in a serving container.

- Next, slice more garlic, parsley and Chili Arbol. Chili seeds so taste-- the more you use, the hotter the dish will be.

- Put infused garlic oil in a sauté pan. When it's hot, add the shrimp. Sear on both sides, then add sliced garlic, Chili Arbol and salt. Stir and cook for a minute or two to coat the shrimp. Deglaze the pan with Brandy, add chopped parsley, sauté for another minute or so, and it's ready.

To Plate:

Plate the dish in a shallow bowl along with the garlic oil from the pan.

Add bite-sized chunks of fresh Ciabatta bread along the edges to dip into the garlic oil.

Serving suggestion: Albariño- Lagar de Cervera.
