Thai Steamed Mussels/The River

The Dish: Thai Steamed Mussels

Ingredients:
20 mussels, scrubbed and rinsed
1/4 cup canola or grape-seed oil
1 clove garlic, smashed and chopped
1 Tbs. ginger, chopped
1 Tbs. lemongrass, white part chopped
1/2 cup chopped tomatoes
1/2 cup scallions, sliced
pinch Chile de Árbol
1 cup unsweetened coconut milk
1 cup sake
juice of one lime
1/4 cup fresh chopped cilantro
1/4 cup fresh chopped basil
kosher salt to taste

Method of Preparation:

- Put canola oil in a hot pan and add chopped garlic, lemongrass, ginger and sauté.

- Add chopped tomatoes, scallions and mussels. Sauté for a couple of minutes and then season with kosher salt and Chile de Árbol. If you don't have that, you can substitute crushed red pepper. Next, add sake or dry white wine. Cover and let simmer for about four minutes.

- Next, add unsweetened coconut milk, simmer for a few more minutes and finish with basil, cilantro and lime juice. Stir; add a bit more kosher salt to taste.

To Plate:

Spoon the mussels and broth into a serving bowl. Garnish with cilantro and it's ready to eat! *Having a nice piece of crusty bread might also be a good idea, since you'll have all of that lovely broth to sop up!

Serving suggestion: Red Amber Ale
