The Ritz Carlton SoBe - Burger Bash

It's hard to believe but the South Beach Wine and Food Festival is celebrating its 13th year. Tonight, to kick off the big event is the G hosted by Michael Symon, who will be joined by a few Sports Illustrated beauties. It's a party that celebrates all things meat and Moët.

Also, tomorrow Friday is the popular Burger Bash. We went behind the scenes earlier this week at the Ritz Carlton South Beach to find out what kind of burger it takes to bring home the bacon.

When it comes to making the perfect burger, The Ritz Carlton on South Beach knows how to flip a patty like nobody's business.

Shireen: "What is the key to making a perfect burger?"

Amol Agarwal: "I think it's a good combination of the quality of the meat and how much amount of fat is in there."

Every year, the luxury hotel (also known as Shireen's second home, enters the South Beach Wine and Food Festival's Burger Bash.

Amol Agarwal: "I mean a good burger has to be a juicy, dripping burger."

And this year, chef Amol has something spicy up his sleeve. And that has nothing to do with me in the kitchen.

Amol Agarwal: "Maybe I could show you how to do a burger and we could see what you could do?"

Shireen: "Ah...no but I'll watch you."

The burger they choose to compete with is a top-bun secret, until the night of the bash.

Shireen: "Are you allowed to choose the one you'll submit, or is it a meeting of the minds?"

Amol Agarwal: "It's more of a meeting of the minds. We try out a couple of things to see which one is better."

By the way, there are no secrets when Deco is in the house. The chef is making a spicy chorizo burger. Hmmmm..mmmm

Amol Agarwal: "It has that sweetness, the spicy, the smokey-ness, it's a good combination of america's favorite burger and bringing in the latin influence of chorizo in there."

First, the patty is perfected with a pre-mix of chorizo. It's cooked to a medium temp, topped with chihuahua cheese and aole sauce, which is...

Amol Agarwal: "Our own smoke paprika powder, ketchup."

With a lil bit of mayonnaise

Amol Agarwal: "Dill pickle, cilantro and smoke jalapeños."

And viola, you gotta muy calinete burger. Good luck at the bash chef and save me a spot under the tent for all that tasting.
