This weekend South Beach is filled with food and foodies. But the Wine and Food Festival isn't just about beef and bubbles, there is something sweet going on too. We found a guy who thankfully ignored his mom when she said don't play with your food.

Something sweet is happening on South Beach. There's a chef is in town who combines art with dessert.

Chef Paul Joachim: "I am known as the chocolate genius and that means I can sculpt extremely fast, and I sculpt in chocolate and I can sculpt pieces just that this, and I can do them in as fast as half and hour."

Chef Paul is the same guy who sculpted a life size LeBron James out of chocolate.

Now he brought his talents and his medium to South Beach.

Chef Paul Joachim: "I am in town for the a Splendid Ice Cream and Dessert Party at the Gale Hotel."

The Splendid Ice Cream and Dessert Party brings together some of the sweetest dessert chefs and the most talented.

Chef Paul Joachim: "I am going to be working on katness everyone life size. It's live and it's right in front of the guest and I'm working in chocolate and they can see the progression and smell. It's just an incredible experience."

Paul not only makes life-size chocolate sculptures, he's busting out busts of some of your favorite Food Network stars plus a Deco one too.

Chef Paul Joachim: "I made Emeril Lagasse. I sculpt Giada who is an amazing chef and Shireen your very own Shireen."

Shreen is sweet enough to take a bite out of and it turns out you can.

Chef Paul Joachim: "There is nothing in there except chocolate."

Paul isn't just playing with chocolate he wants you to eat it too.

Chef Paul Joachim: "We are doing a wine chocolate tasting. I love blowing peoples minds with different flavor profiles that they've never had before, and people don't think that it will go with the wine and when it does they are just amazed."

The chocolate is specially made to stand up to the SoFlo temps but it's also made to enjoy. Paul's chocolate and wine tasting combines cherries and chocolate or bacon and himalayan sea salt with chocolate, and then he's topping it with olive oil or Sirracha.

Chef Paul Joachim: "People don't think that EVOO or Sriracha will go with the chocolate, but it really works it's amazing."

Sweet, savory and wine. Cheers to the chocolate genius. And cheers to the South Beach Wine and Food Festival.

    Here in So-Flo, we like to hang out half naked, especially in the summer, which is why eating healthy is so important to keep that bod in shape. I know eating healthy can be so boring. I mean, I wanna look good and feel good, but I don't wanna give up taste. I just found a healthy new joint that's both delicious and has me seriously considering becoming a vegan.
