Seafood Moqueca/R House

The Restaurant: R House in Wynwood

The Dish: Brazilian Seafood Moqueca

Ingredients:

2 Tbs. olive oil

1 Tbs. chopped ginger

1 Tbs. chopped garlic

1 sliced red onion

1 Tsp. blended kosher salt and white pepper (8 parts salt, one part white pepper)

3 oz. Corvina (or any dense white fish)

1 Tsp. lime juice

1 cup coconut milk

4 shrimp

4 scallops

3 slices each red, green and yellow pepper

1 Tbs. chopped chives

1 Tbs. cilantro

1 Tbs. parsley

2 each sliced plum tomatoes

1 Tbs. Dende oil

1 cup Basmati Rice (prepare as directed)

Method of Preparation:

- Put olive oil in a hot cast iron skillet. Add chopped ginger, chopped garlic and blend. Add sliced red onions and a blend of kosher salt and white pepper. Add Corvina or any dense white fish that's fresh. Cook for about two minutes.

- Next, add lime juice and coconut milk. Turn the Corvina and continue cooking. Add salted shrimp, scallops and sliced bell peppers (green, yellow and red). Add chopped chives, cilantro, parsley, sliced plum tomatoes and sprinkle on some dende oil. Let it cook for another minute or so.

- Finish in the oven for another 10 minutes at 350 degrees.

To Plate:

Put the skillet on a plate (Careful, it will be hot! Place a cloth napkin in between.) Serve with Basmati rice on the side.

Serving suggestion: Ginger-infused Cosmopolitan
