Bistro Stuffed Shrimp/The Island Bistro

The Dish: Bistro Stuffed Shrimp

Ingredients:

3 jumbo shrimp

3 bacon strips

3 oz. Gruyere cheese

5 pieces asparagus

5 oz. mashed potatoes

1/2 lemon

1 piece shaved black truffle

For Beurre Blanc sauce

2 chopped shallots

1 bay leaf

1 sprig fresh thyme

1 cup white wine

1/2 cup heavy cream

3 Tbs. butter

Method of Preparation:

- Start by making the Beurre Blanc sauce. In a hot pan add chopped shallots, bay leaf, thyme and white wine. Bring to a boil and then let it reduce about ten minutes.

- Now, make the shrimp. Butterfly shelled jumbo shrimp, slicing them partially open along the back. Chef Giovanni uses jumbo Tiger shrimp but any large shrimp will do. Put a slice of Gruyere cheese in the groove and then wrap it up with a strip of bacon. Be sure and tuck in the ends so it will stay together!

- Add unsalted butter to a hot pan and let it melt. Add the stuffed shrimp to the pan and sauté until the bacon is crispy- several minutes. Next, drain the butter and finish in the oven for 7 minutes at 375 degrees.

- While the shrimp is in the oven, check the sauce. Once it reduces, add heavy cream and reduce again. Pour the liquid through a strainer, add butter and blend.

To Plate:

Plate with fresh lemon, a scoop of mashed potatoes, asparagus, the stuffed shrimp- and garnishes with shaved black truffle on top of the potatoes. He serves the Beurre Blanc sauce on the side.

Serving suggestion: Pinot Grigio
