Carol's Cucina and Vino

Posted: Updated:

At the United Nations, countries adjust their politics to find common ground, a new restaurant in the 305 is doing the same thing with food. Carol's Cucina and Vino is fusing Italian and Brazilian cuisine and making your taste buds do the Samba Italiano

The foods and flavors of Italy and Brazil are coming together at Carol's Cucina and Vino in Downtown Miami. It's a mix that starts with the owner herself.

Carolina Moura: "I am Brazilian-Italian fused coming from an Italian mother and Brazilian father being raised in Miami you'll find all of that here."

Caolina wouldn't put anything on your plate that she hasn't tried herself.

Carolina Moura: "This was exactly what I would I grew up eating."

Here's a Deco fun fact: Brazil has the second largest Italian population in the world. The two cuisine's have more in common than you might think.

Carolina Moura: "Most of our ingredients are the same they're very fresh Brazilians and Italians cook the same way five ingredients or less per plate. It's not very heavy in spices like an Indian cuisine would be."

Nothing screams Italy more than pizza. It's the sausage on top that's muito bom.

Carolina Moura: "So we took an Italian pizza and the topping is a Brazilian calabrese which is a little spicier."

European seafood and South American spices get along swimmingly in the octopus salad.

Carolina Moura: "You have fresh octopus on it grilled a confit and then you have again the Brazilian spices in that confit, and in the dressing of the watercress."

Il dolce comes Brazil: The chocolate brigadeiro and the coconut-based bayjeanyo and keengeem will transport you to the land of carnavale. The vino is more la dolce vita.

Carolina Moura: "The Italian wines are what we focus on heavier here at Carol's much more than the Brazilian wine. It's it's a little too sweet for the american palate."

Carolina's food is so authentic mama e pai would be very proud.

Carolina Moura: "They love it."

I'll never forget the endless summers I spent on the coast of North Carolina. My shoulders were always kissed by the sun, my hair was continually salty from the ocean and my one-piece, bright blue bathing suit was my constant companion.

I don't remember dying, but I did. Twice. It was a chilly Fall morning in October at a dentist's office in Santa Fe. My mom had escorted me to what was supposed to be a regular wisdom teeth extraction appointment.
